Sashi's Roast Potatoes

  • Side Dish


  • 500g kipfler potatoes 
  • 1tbsp plain flour
  • 80g duck fat
  • 1 garlic bulb halved 
  • 1-2 tbsp rosemary leaves
  • 1tbsp chilli flakes
  • Salt flakes


  • Place the potatoes in a saucepan with cold, salted water and bring to a boil and reduce the heat to medium and cook for another 10mins or until tender. Drain and pat dry the potatoes.
  • Melt the duck fat, add potatoes, garlic and sage, gently coat. Place in the oven and cook for 1hr, turning and basting a few times until golden and crispy. Add the carrots at the last 30mins. Season with salt flakes.
