Sashi's Roast Potatoes
SERVING SIZE:

INGREDIENTS:
- 500g kipfler potatoes
- 1tbsp plain flour
- 80g duck fat
- 1 garlic bulb halved
- 1-2 tbsp rosemary leaves
- 1tbsp chilli flakes
- Salt flakes
METHOD:
- Place the potatoes in a saucepan with cold, salted water and bring to a boil and reduce the heat to medium and cook for another 10mins or until tender. Drain and pat dry the potatoes.
- Melt the duck fat, add potatoes, garlic and sage, gently coat. Place in the oven and cook for 1hr, turning and basting a few times until golden and crispy. Add the carrots at the last 30mins. Season with salt flakes.
